Achari Dahi Bhindi is a very famous Punjabi dish made with Indian spices. Achari Dahi Bhindi is simple and easy to make. ‘Achari’ means pickling which is made using a mix of spices.
This Recipe a delicious combination of Bhindi with Achari flavors cooked in yogurt curry, makes for a excellent combination. It is also perked up with a wide assortment of seeds and spice powders, which give it a super peppy flavor and aroma too. Yogurt and tomatoes are being added to Achari Sabji which give a double-tangy flavor to curry. The bhindi is sautéed till it is crispy and then tossed along with onions, freshly ground achari masala and then slowly cooked in thick yogurt.
Achar (pickle) spices tastes absolutely delicious and when paired with bhindi it creates a
wonderful dish that you can eat it up with any Indian bread.

Ingredients:
Bhindi (Okra): 400gms (cut length wise)
Onion: 1 medium (finely chopped)
Yogurt: 3-4 tbsp
Tomato : 1 medium
Veg. Oil/Mustard Oil: 3 tbsp
Cumin: 1/2 tsp
Mustard Seeds: 1 tsp
Fenugreek Seeds: ½ tsp
Ginger Paste: 2 tsp
Coriander Powder: 2 tsp
Cumin Powder: 1 tsp
Nigella Seeds: ½ tsp
Asafoetida: ¼ tsp
Turmeric Powder: 1/2 tsp
Red Chili Powder: 2 tsp
Kashmiri Red Chili Powder: 1 tsp
Fennel Powder: 2 tsp
Salt: To taste
Method:
Cut all bhindi lengthwise. Make 4-6 pieces of each bhindi.
Take a Pan and add 2 tbsp of Veg Oil or Mustard Oil. Heat on a medium flame.
Add all bhindi pieces and add 1 tsp salt and shallow fry.
Remove these bhindi pieces from Pan and keep it aside.
In a pan, add 2 tbsp of oil and heat on a medium flame.
Add Cumin, Mustard Seeds, Fennel Seeds, Fenugreek Seeds, Nigella Seeds, Asafoetida and sate
well.
Add Ginger Paste, Turmeric Powder, chopped onions and mix all these ingredients on a medium
flame.
Add tomato and heat the fixture for 2-3 minutes on a medium flame.
Once the tomato are soft, add Red Chili Powder, Kashmiri Red Chili Powder, Coriander Powder
and mix them well.
Now switch off the flame, add Yogurt and saute the entire mixture for a minute. Add salt.
Finally transfer the shallow fried bhindi (Okra) pieces to the mixture and saute on a medium
heat.
Keep a lid on and cook for 4-5 minutes.
Now the Aachari Dahi Bhindi is ready. Serve hot with Chapati/Roti.
