Ingredients:

Bhindi (Okra): 250 gms, washed and dried

Red Chili Powder: 1 tsp

Turmeric Powder: 1/3 tsp

Amchur Powder: ½ tsp

Coriander Powder: ½ tsp

Cumin Powder: ½ tsp

Chat Masala: ½ tsp

Gram (Besan) Flour: 2 tbsp

Rice Flour: 1 tbsp

Salt to taste

Oil for Frying

Method:

  • Remove the crown and the base tip of bhindi.

  • Cut the bhindi in two pieces, then cut each part vertically (lengthwise) and remove the seeds.

  • After the removal of seeds, slice thinly. The thinner the slices the faster they’ll crisp up and remain crisp.

  • Take all sliced pieces of bhindi a bowl, add Ajwain, turmeric powder, red chili powder, cumin powder, amchur powder, coriander powder, gram flour, rice flour and salt. Mix it well and coat the bhindi. Set aside the marination for 10-15 minutes.

  • Now heat the oil in a heavy bottomed Pan or Kadhai and once the oil is hot, drop the coated bhindi in the pan/Kadhai and deep fry on a high heat until golden brown and crunchy.

  • Don't over-fry the bhindi.

  • Place the fried bhindi on paper towels, so that the excess oil is drained.

  • Kurkuri Bhindi is now ready to eat as an evening snack with tea or enjoy with the main course. Sprinkle some red chilli powder and Chat Masala on top and enjoy.
