Anda Ghotala

Anda ghotala is a popular street food recipe in Surat and now is making its way to the street

food every where. It is a high protein dish and is loved by people of all ages.


If you are an Egg- lover, you must absolutely love this street food dish. This dish is creatively

named too. An absolute must have is the Egg Ghotala and the Boiled Egg Masala with Pav

(Bread). Ghotala means a mixture and is kind of like Pav Bhaji but made with Eggs. It has a very spicy base of tomato and onion mixed with fried egg and grated boiled egg.


Eggs cooked up beautifully in aromatic Indian spices, such a simple yet delightful dish! One of my favourite egg recipes ever! It is very spicy! It tastes delicious with bread or pav.


So, Let’s Cook Good Food…


Ingredients:


Boiled Eggs: 2 (cut into medium sized pieces )

Beaten Egg: 1

Butter: 2 tbsp

Onion: 1 Medium (Finely Chopped)

Ginger-Garlic paste: 1 tbsp

Green Chillies: 2 (Finely Chopped)

Red Chilli Powder: 1-1/2 tsp

Cumin Powder: 1 tsp

Coriander Powder: 1 tsp

Turmeric Powder: ½ tsp

Garam Masala: ½ tsp

Tomato: 1 large (Finely Chopped)

Pav Bhaji Masala: 1-1/2 tsp

Salt to taste

Water: ½ Cup

Fresh Coriander Leaves: 1 tbsp+ To garnish


Method:


  • To begin the process, first melt butter in a preheated pan..

  •  Next, into the pan, add the onions along with the finely chopped green chilies and saute for 5-6

  • minutes.

  •  Cook the onions until they turn into a lovely golden colour.  Add ginger garlic paste and mix well.

  •  Once the onions have reached the desired golden colour, add all spices – Turmeric, Red Chili

  • Powder, Cumin Powder, Coriander Powder, Garam Masala and saute for 1-2 minutes.

  •  Stir in the chopped tomatoes, add salt, Add ½ cup of water and cover and allow the tomatoes to

  • become mushy. 

  •  Add the pav bhaji masala and mix well. 

  •  Cook the tomatoes for about 3-4 minutes.

  •  open the lid and using a potato masher, mash the onion-tomato mixture well.

  •  Add finely chopped fresh coriander leaves.

  •  Now add boiled egg pieces in to the mixture and again mash the entire mixture.

  •  Add beated egg and saute for another 3 minutes.

  •  Mix vigorously to scramble the eggs in the onion tomato masala and mix until well combined.

  •  Anda Ghotala is now ready. Turn off the heat and transfer the Anda Ghotala into a serving

  • platter and set aside. 

  •  Garnish the dish with grated boiled egg and fresh coriander leaves.

  •  Serve Anda Ghotala with Pav/Bread.
