Batata Vada is a popular potato snack recipe from Maharashtrian Cuisine. These are popular street food not only in Mumbai but across India. Batata translates potato and vada to fried dumplings. In short batata vada are potato vada made by dunking spiced potato balls in gram flour and deep fried. These are similar to South Indian Aloo Bonda and are a popular street food across India.
Batata Vada are quite simple and quick to make for a evening snack. These also make a great party snack or an appetizer. These are mostly served with Green Chutney or sandwiched in a Pav to make Vada Pav.
So, Let’s Cook Good Food…
Ingredients:
Potato 3 medium, 1-1/4 cups crumbled
Curry Leaves 8-10
Green chilies 2-3, finely chopped
Ginger ¾ Inch
Garlic 2-3 cloves
Mustard Seeds ¼-1/2 tsp
Turmeric Powder 1/4 tsp
Red Chilli Powder 1/8 tsp (Optional)
Pinch of Hing (Asafoetida)
Amchur Powder ½ tsp
Handful coriander leaves, chopped
Oil 1 tbsp
Salt to taste
Batter for Frying:
Gram Flour or Chickpea Flour ¾ Cup
Corn Flour or Rice Flour 2-3 tbsp
Red Chili Powder 1/8 tsp (Optional)
Turmeric Powder ¼ tsp
Pinch of Hing (Asafoetida)
Tiny pinch of Soda
Salt to taste
Oil for frying
Water as needed
Method:
Boil potatoes until just done. They must be firm and not mushy.
When done, crumble them lightly.
Make a coarse paste on green chilli, garlic and ginger
Now heat 1 tbsp oil in a pan. Add mustard seeds, when they begin to crackle.
Add curry leaves and fry until crisp. Add ginger garlic and green chili paste.
Fry on a low heat until it turns fragrant.
Add hing, salt, turmeric, red chili powder and mature powder.
Mix well and add potatoes and coriander leaves. Turn off the stove and mix everything well.
Cool this mixture and make balls.
To make a batata Vade, heat oil for a deep frying.
Add Besan and rice flour or corn flour to a mixing bowl.
Add red chili powder, turmeric powder, Amchur powder, salt, hing (asafoetida). Mix everything well adding water as needed and make neither too thick nor too thin better.
Check salt and spice.
When the oil is hot enough, add a tiny pinch of soda to the batter. Mix well.
Regulate the flame to medium.
Deep each ball in the batter, coat the potato ball with batter and drop in the oil.
Do not disturb them for a while, gently stir and fry until golden.
Serve this Batata Vada hot with Coconut Chutney.
