Cooking a chicken recipe is a skill. Making restaurant style Chicken Gravy has never been easier. A perfect chicken gravy recipe in its full glory is nothing short of a masterpiece.
The chicken should be cooked delicately and can be bathed, steeped, stewed or simmered in the gravy. Once the oil starts separating you know your base is ready. This chicken recipe is a delight for chicken lovers and also who loves spicy food. Cashew naturally add creaminess to the gravy. An essential ingredient is Kasuri methi or dried fenugreek leaves. It adds a mild smokiness and just rounds of the flavors.

Serves 4.
Ingredients:
Chicken:1 lbs (cleaned and cut into small pieces with bones.)
Ginger Garlic Paste: 2 tsp
Onion: 2 Medium (chopped)
Cashew nuts: 10
Whole Red Chillies: 5-6
Red ripe tomatoes: 2 Medium
Turmeric: ½ tsp
Kashmiri Red Chilli Powder: 1-1/2 tsp
Coriander Powder: 2 tsp
Garam Masala: 31/2 tsp
Kasuri Methi: 1 tsp (roasted and crushed)
Oil: 4 tbsp
Salt to taste
Water as required
Method:
Clean chicken pieces well and keep it aside.
Chop the onions ands quarter the 2 red tomatoes
Dry roast the cashew nuts and red chillies in a pan on low flame for 2-3 minutes.
Continue to blend it into a smooth paste.
Dry roast the fenugreek leaves (Kasuri Methi) in a pan, allow it to cool and then crush lightly with your hand.
Heat the oil in a pan/Kadhai
All the chopped onions and fry on medium flame for 5-6 minutes till translucent.
Now add the ginger garlic paste and fry for 2 minutes on a low flame.
Add turmeric, Kashmiri red chilli and coriander powders and mix it well. Fry it on low flame for 2-3 minutes after adding a splash of water.
Now add the chicken pieces, mix well, and fry it on medium flame for 5-6 minutes till the chicken is browned well.
Add the salt and mix it well.
Now add the cashew-red chilli-tomato paste, mix well and fry for 5-6 minutes on medium flame till oil separates.
Add the garam masala, mix and cook for one minute.
Add one cup of water, mix, and cover and cook for 10-12 minutes.
Remove the lid and add Kasuri methi, mix and simmer for 2 more minutes.
Serve with Chapati or rice.
