Murg Patiala Kebab



Punjab is the biggest region/province of India. The culture, the taste and the cooking of this

Punjab have stayed intact even after centuries. Punjabi food is wholesome and full of rustic

flavour. The custom of cooking in community ovens or tandoors prevails in rural pockets today.


The most unique thing about cooking in a tandoor is the smoky flavors that the food gets

making it tastier. Moreover it is a healthy way of cooking since minimum fat is required and the food generally gets cooked in its own juices thus retaining its natural flavours.

The Patiala Chicken recipe is also referred to as Murg Patiala and is one of the most famous

recipes of the Punjabi cooking style. The flavor of Murg Patiala Kebab is tempting and you will enjoy each bite of this.


So, Let’s Cook Good Food…


Ingredients:


Chicken  1 lbs (1/2 kg), leg boneless

Onion  1 medium, finely chopped

Besan (Gram Flour)  1-1/2 tbsp

Chakka  3 tbsp

Ginger Garlic Paste 2 tbsp

Mustard Oil  2 tbsp

Red Chili Paste  2 tbsp

Red Chilli Powder  1 tsp

Garam masala  1 tsp

Green Chili  2-3 finely chopped

Kasuri Methi  1 tbsp

Chat Masala  1 tsp

Cumin Powder  1 tsp

Lemon  2 tbsp

Black Salt  ½ tsp

Butter

Salt to taste


Method:


First Marinade:


  •  In a bowl take all chicken leg pieces thoroughly washed.

  •  Add 1 tbsp of red chili paste, 1 tbsp of ginger garlic paste,1 tbsp of lemon juice and ½ tsp of salt and mix well. Keep it aside.

  •  Take 2 tbsp of oil in a pan, heat it on a medium flame.

  •  Once hot, add onion and saute till it turn golden brown.


Second Marinade:


  •  In an another bowl, add 3 tbsp of Chakka, I tbsp of ginger garlic paste, 1 tbsp of red chili paste, 1 tsp of garam masala, 1 tsp red chili powder, I tsp of cumin powder, green chili, 1 tsp chat masala, 1 tbsp of lemon juice, Kasuri methi, black salt, 2 tbsp of mustard oil, besan. Finally add fried onion and mix well.

  •  Add marinated chicken to this masala mixture and coat well.

  •  Keep this marination aside for 30 minutes.

Grill:


  •  Now put the chicken pieces on the skewers.

  •  Grill the chicken kebab in a preheated oven (250 deg F). Keep the temp 180 Deg F for @20-25 minutes. Apply butter on a chicken pieces.

  •  Once the chicken is brown, turn the chicken sticks upside down. Apply butter on chicken pieces and grill further.

  •  Make sure that chicken is thoroughly grilled all across.

  •  Serve this delicious Murg Patiala Kebab with green/Pudina chutney.
