Stuffed potato fried idli

This recipe is the combination of South India and Western India. Idli is the most common

breakfast among south Indian household and Potato Vada is a common snack of

Maharashtrians. But eating idli and potato Vada together is something interesting isn’t it? This is Potato Stuffed Fried Idli – where a Maharashtrian style potato Sabji is stuffed in between spoonful of south Indian idli batter and steamed together. Further it is fried with gram flour to get a real taste and feel of Idli and Potato Vada.


This is a simple yet delicious recipe. I hope you will enjoy it as much as I do.


So, Let’s Cook Good Food…


Ingredients:


Idli Batter  400gms

Boiled Potato  4

Curry Leaves  8-10

Green chilies  2, finely chopped

Onion  1 Medum (finely chopped)

Ginger Garlic Paste  I tsp

Turmeric Powder  1/3 tsp

Salt to taste

Oil for frying


Batter for Frying:


Gram Flour or Chickpea Flour  ¾ Cup

Corn Flour or Rice Flour  2-3 tbsp

Chili Powder  ½ tsp

Turmeric Powder  ¼ tsp

Pinch of Hing (Asafoetida)

Tiny pinch of Soda

Salt to taste

Water as needed


Method:


For Stuffing:


  •  Mash/ grate the boiled potato and keep it aside.

  •  Heat oil in a pan, add curry leaves, green chilli and onion. Fry it for 2 minutes on a

  • medium flame.

  •  Add ginger garlic paste, turmeric powder and salt, mix it and fry it for a minute on a low flame.

  •  Add grated/mashed potatoes, fry it for a minute on a low flame.

  •  Add coriander leaves, fry it for one more minute on medium flame, keep stirring.

  •  Turn off the flame and take out the aloo bharta in a bowl.

  •  Grease your palm with few drops of oil and take small portion of aloo bharta.

  •  Roll it in your palm to give it tikki shape, make tikkis from the remaining bharta.


Idli Process:


  •  Boil a glass of water in idli pot, in the meanwhile grease the idli tray with oil.

  •  Add little salt into the idli batter and add ½ serving spoon of batter in each mould on idli tray.

  •  Place one aloo bharta tikki in each batter filled mould, pour ½ serving spoon of batter on the top of aloo bharta tikki (Make sure the tikkis are covered with batter properly).

  •  Repeat the same process for remaining batter, stuffed idlis are ready for streaming.

  •  Place the idli tray carefully inside the idli pot and cover the lid.

  •  Cook it for 12-15 minutes on medium flame, turn off the flame.

  •  Gently take out the idli from tray.

Batter and Frying process for potato stuffed Idli:


  •  Take gram flour in a bowl.

  •  Add red chili powder, turmeric powder, salt, hing (asafoetida). Mix everything well

  • adding water as needed and make neither too thick nor too thin better. Check salt and

  • spice.

  •  When the oil is hot enough, add a tiny pinch of soda to the batter. Mix well.

  •  Regulate the flame to medium.

  •  Deep each potato stuffed idli in the batter, coat the idli with batter and drop in the oil.

  •  Do not disturb them for a while, gently stir and fry until golden.

  •  Serve this Potato Stuffed Fried Idli with Coconut Chutney.
