Surmai Tawa fry is a popular fish fry recipe. This fish fry is crispy and moist and soft inside.
Surmai or seer fish is a fleshy fish, has minimal bones. This recipe is all about marination which plays a twofold part in this recipe. First marination involves lime juice which tenderizes the fish fillets. The second marination is more important as it infuses all the flavours in to the fillets. Surmai has no taste of its own and it readily imbues the flavour of all spices and other ingredients of marinade.

Ingredients:
For Fish Marinade:
Surmai Fish/Seer Fish: 350 gms
Lemon Juice: 1 tsp
Ginger Garlic Paste: 1 tsp
Salt: ¼ tsp
Turmeric Powder: ¼ tsp
For Fish Marinade:
Red Chili Powder: 1 tbsp
Rice Flour: 2 tbsp
Coriander Powder: 1 tsp
Cumin Powder: ½ tsp
Garam Masala: 1 tsp
Tamarind Pulp: 1 tbsp
Salt to taste
Water as needed
For Crispy Fish Coating:
Coarse Sooji: 4 tbsp
Chilli Powder: 1 tsp
Salt to taste
Oil for Shallow Frying
Method:
Fish and Masala Preparation:
Wash Surmai fish really good and pat dry very well.
Now take washed and dried fish into a bowl.
To add ginger garlic paste, lemon juice, turmeric powder and salt.
Apply marinade all over fish pieces.
Cover and set aside for 30 minutes.
To make fish fry masala, take 2 tbsp rice flour into a bowl.
To that add red chilli powder, garam masala, coriander Powder, cumin powder and mix well.
Add salt to taste.
Add tamarind pulp and mix well.
Add little water and mix well to make that into a thick paste.
Now take fish pieces and coat them by fish fry masala from all sides.
Once all the fish pieces are coated with masala, keep them aside.
Now take sooji/rawa and rice flour into a separate dish and mix it properly.
To that add red chilli powder, salt and mix well.
Coat fish pieces from all the sides in to sooji mixture and keep them aside.
Frying Process:
Heat oil in a pan, oce the oil is heated properly, reduce the flame to low.
Put all coated fish pieces into the pan and allow it to fry till it gets deep golden colour.
Flip it to fry other side, add few drops of oil and allow it to fry till it gets deep golden
colour.
Super tasty Surmai fish is ready to serve, serve hot. It goes well with rice Bhakari or with rice.
