Zatoon Murgh ke Kuhsh Kabab



Zatoon Murgh ke Kuhsh Kabab is the best delicious, soft, succulent and flavorful chicken kabab. These Kababs are a great party food. If you are looking for altogether different tasty chicken kabab, then these kababs are a good choice.

Ingredients:


For Murgh Marinade:

  • Chicken Breasts: 4 (125 gms each)

  • Lemon Juice: 4 tsp

  • Zatar: 2 tsp

  • Garlic Paste: 2 tsp

  • Olive Paste: 4 tsp

  • Pine nut Paste: 4 tsp

  • Hung Curd: 80 gms

  • Olive Oil: 50 ml

  • Basil Springs: 4

  • Thyme Springs: 5 gm

  • Green Olives: 8

  • Black Olives: 8

  • Roasted Pine nuts: 10 gm

  • Onion Rings for garnish

  • Fennel Powder: 5 gm

  • Cumin Powder: 5 gm

  • Copped coriander stem: 1 gm

  • Salt to taste

Method:

  • Clean the chicken breast and pat it with a steak hammer.

  • Initially marinate the breast with lemon juice, salt and zaatar powder.

  • Later make the second marination with hung curd, salt, zaatar powder, olive paste, pinenut paste, garlic paste, oilive oil, lemon juice, fennel powder, cumin powder, chopped coriander stem and chopped olives.

  • Marinate for four hours.

  • Cook chicken in the tandoor or oven till well done. Cool it and chill. Those using an oven can cook at a temperature of 250 degree centigrade for 10-12 minutes.

  • Add olive oil, thyme spring, crushed garlic and bake the marinade.

  • This reduction marinade will be the preserving for chicken. Delicately slice the chicken and arrange nicely on the bed of Khubz (bread).

  • Accompany with onion rings, a spoon of olive paste, and a sprinkle of roasted pinenuts.

  • Just before serving add the marinade. The marination will be enhanced by adding lemon juice.
